How old is Pai Mei anyway?

Coz that part when Bill and Bride were by the campfire, Bill was telling her a story about how Pai Mei nodded at some monk who didnt nod back and then killed everyone in the whole temple. Bill said that it was set in the year "one double knot three" which is 1003!!!

I highly doubt Pai Mei is 1000years old so was that Pai Mei's ancestor, who's also named Pai Mei?
