How do Sanctuary's stage theme changes work?

I've just noticed that when selecting the stage sanctuary, sometimes it snows, others times you are in hell, the other times it's flooded, and of course occasionally you are in space.

How does any of that work? Especially on Xbox???

 

The space stage is only on arcade due to the fact that the stage actually changes to no wall.
You can't choose which version of the stage you wanna be in, that I know of. It's just going to be one of the 3 mentioned before.

 

Space Stage also appears in Special Challenge 50 vs Dural on the console ports. It’s too bad we can’t actually play that stage in vs. mode as it would actually be a pretty hype stage to fight in.
